Vegan Chocolate Chip Cookies







I've always loved baking. When I went plant based that presented a challenge. All of my favorite tried and true recipes included dairy and eggs. For a while I just focused on the other aspects of cooking plant based, but with the holidays fast approaching I needed to at least give it a try. Because it's not Christmas without hours and hours of baking.

It all started with a promise to bake my grandmother some chocolate chip cookies. So off to the grocery store I went to get the ingredients, because butter and eggs are something I no longer keep in my home. She is 90, so I do whatever I can to make her happy.

  So as I was shopping for the bad stuff, there it was on the shelf.. plant butter. While this might not be a new ingredient to many of you, I live in a small town and the nearest Whole Foods is about 2 hour drive. It was a welcomed sight.

I took it as a sign that I needed to try and revamp my old recipe. So I happily put the bad stuff back and took the better choice home with me. The plant butter is oil based, so not an everyday indulgence for me.

Ingredients~


  • 2 sticks of plant based butter
  • 3/4 cup of organic brown sugar
  • 3/4 cup or granulated sugar ( I used Morena) 
  • 1 teaspoon of vanilla extract
  • 3 tablespoons ground flax seed
  • 6 tablespoons water 
  • 2 1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 2 cups dairy free chocolate chips



* I used my stand mixer for this recipe. You can make this recipe with hand mixer, but you will need to allow your plant butter to soften longer.



Preheat your oven to 350 F



In a small bowl or measuring cup combine water and ground flax seed, mix well. Set aside and allow to become gel like, this is your egg replacement.








In a stand mixer with the whisk attachment beat plant butter to soften. Scrape down your bowl with spatula, add sugars and cream together. I let mine beat for about 3-4 minutes or until well combined and fluffy.







Add vanilla extract and your flax egg mixture. Mix well to combine, scrape down your bowl and mix again.






In a medium bowl mix flour, baking soda and baking powder. Add flour mixture to butter mixture 1 cup at a time mixing between each addition.  Scrape down your bowl and mix one final time.







Fold in your chocolate chips.







Using a cookie scoop place  on parchment lined baking sheets.










 Bake 12 minutes or until golden brown. When using a 1 1/2 tablespoon cookie scoop recipe will make about 40 cookies.

  2. Very efficiently written information. It will be beneficial to anybody who utilizes it, including me. Keep up the good work. For sure i will check out more posts. This site seems to get a good amount of visitors. Larabar Commercial chocolate has sugar and sometimes milk added.
